Honduras Finca El Manzanal Honey
This coffee presents a clean, uniform cup with a profile centered around dried fruit, mild sweetness, and balanced structure. Aromatics include notes of black cherry, black tea, dried dates, and molasses. The dry fragrance showed elements of aged sweetness and brown spice, while the ground aroma revealed additional layers of molasses, cinnamon, vanilla, and red apple.
Finca Integral El Manzanal is a family-run farm committed to sustainable practices and community-centered operations. The farm uses traditional drying methods that support local employment and emphasize quality. The farm maintains clean processing standards and minimizes environmental impact through careful on-site management.
This coffee is directly sourced from Finca Integral El Manzanal through a second-generation producer to buyer relationship. All processing, from harvest to export preparation, is handled on-site, ensuring traceability and consistency. The farm supplies fully traceable micro-lots with low defect rates and a focus on quality-driven practices.

Progress started as a cafe in east Austin twenty years ago, long before mid- or high-rises dotted the sky. We started roasting coffee as a way to control the quality of our offerings. We've since moved on from that space but continue to apply the same high standards to the coffee we roast.
